For the month of March, enjoy a special menu paired with wines from Domaine Seguin-Manuel. Established in 1824 in the heart of Beaune and now led by 10th-generation winemaker Thibaut Marion, this historic estate is celebrated for its organic approach and "climats" that express the pure soul of each vineyard, which includes some prestigious plots in Beaune, Puligny-Montrachet, Pommard, Meursault, and Vosne-Romanée.

Since 2012, the vineyard has been transitioning to organic farming, eliminating the use of synthetic chemicals. The soils are ploughed to strengthen vine roots, and harvesting is done manually, ensuring a meticulous selection of grapes.
